Big Mac Tacos: bringing “the golden arches” to taco night with seasoned beef, special sauce, lettuce, cheese, pickles, and onions on a sesame-style tortilla.

There’s something almost uncanny about capturing the essence of a Big Mac in taco form. Say the name and most people know the flavor profile you’re after: savory beef, tangy pickles and sauce, melty American cheese, and crisp iceberg lettuce. These tacos recreate that combination with simple ingredients and straightforward cooking.

Before you start, gather the ingredients and basic equipment. The ingredient list looks long but it’s mostly common pantry items. This recipe is quick and easy, so you’ll be at the tasty part in no time.

Ingredients

  1. Small flour or corn tortillas (street-taco size recommended)
  2. Lean ground beef (see recipe amounts below)
  3. Pickle juice (dill pickle brine)
  4. Cornstarch
  5. Ketchup
  6. Yellow mustard
  7. Granulated garlic or garlic powder
  8. Granulated onion or onion powder
  9. American cheese slices (or mild cheddar)
  10. Shredded iceberg lettuce
  11. Dill pickles (chopped) or dill pickle relish
  12. Sweet or red onion (chopped)
  13. Burger sauce or Thousand Island-style dressing (for the “special sauce”)

Both corn and flour tortillas work well; choose what your family prefers. Small street-taco tortillas make them easier to eat without losing toppings, but larger tortillas are fine if needed. If you prefer crunch, you can use taco shells, though they won’t mimic the sesame-seed bun texture as well.

You can prepare the beef mixture up to two days ahead and reheat when ready to assemble. Instead of typical taco seasoning, this recipe uses the condiments associated with a Big Mac to achieve that iconic flavor.

American cheese is the most authentic choice, but a blend of shredded cheddar and mozzarella works if you prefer. For pickles, chopping them small helps distribute pickle flavor in every bite; dill pickle relish is a convenient substitute if you like a saucier texture.

The special sauce can be a homemade copycat Big Mac sauce or a Thousand Island-style dressing. For a quick shortcut, similar store-bought sauces can work too.

Equipment

  1. Skillet (large)
  2. Wooden spoon or sturdy chopper
  3. Measuring spoons and cups
  4. Small whisk or fork
  5. Tongs
  6. Foil (to hold warmed tortillas)

Big Mac Tacos

Use these ingredient amounts for about 10 small tacos (serves roughly 4–5): 1 pound ground beef, ¾ teaspoon kosher salt, ½ teaspoon black pepper, ½ cup ketchup plus 2 tablespoons, 2 tablespoons yellow mustard, ½ teaspoon granulated garlic, ½ teaspoon granulated onion, 1½ tablespoons dill pickle brine, and 1 teaspoon cornstarch. For assembly: 10 small tortillas, 8 slices American cheese, 2 cups shredded iceberg lettuce, 1 cup chopped dill pickles, 1 cup chopped sweet or green onions, ½ cup burger sauce (or to taste), and sesame seeds for garnish.

1. Crumble the ground beef into a medium skillet set over medium heat. Sprinkle with salt and pepper and break it up as it browns.

2. If there is excess fat, drain most of it off, leaving about 1–2 tablespoons in the pan for flavor. Stir in the ketchup, granulated garlic, and granulated onion.

3. In a small bowl or jar, whisk the pickle juice and cornstarch into a smooth slurry. Pour this over the beef and cook over medium-high heat, stirring, until the mixture thickens and becomes glossy.

4. Heat or char each tortilla: hold briefly over a gas burner with tongs or warm in a dry skillet. Stack the warmed tortillas in a piece of foil to keep them hot and pliable.

5. Place a slice of cheese on each hot tortilla, then spoon an even portion of the Big Mac-style beef mixture over the cheese. Add shredded lettuce, chopped pickles, and onions.

6. Drizzle burger sauce over the assembled tacos and sprinkle a few sesame seeds on top just before serving.
