Slow Cooker Beef Barley Soup
There’s nothing like a hot bowl of soup on a winter day. The aroma of beef, vegetables, and barley simmering away in the slow cooker is irresistibly homey.
This Beef Barley Soup is quick to assemble and delivers deep, comforting flavor. It’s a go-to when you want a homemade meal without spending hours in the kitchen.

About Barley
Barley is a versatile whole grain used in soups, stews, breads, salads, and beverages. It’s typically sold as hulled or pearl barley. Hulled barley retains the bran and germ and is less processed, while pearl barley has had the hull and bran removed.
This recipe uses pearl barley, which releases starch into the soup and helps thicken it. If you prefer hulled barley for its higher nutrition, it can be substituted—but expect it to take about 20–25 minutes longer to cook and to produce a less thick broth.
Either type of barley expands to roughly three times its dry volume when cooked. If you cook the barley separately, use water or stock for extra flavor and add it to the soup just before serving.
Beef Barley Soup Recipe Notes
This soup is an excellent way to use leftover cooked beef—shredded or diced roast works especially well. Adding leftover beef saves time, reduces waste, and deepens the soup’s flavor.
Beef and barley are a classic pairing, and when combined with potatoes, carrots, celery, and onions they create a robust, comforting soup everyone will enjoy.

Slow Cooker or Stovetop
Beef Barley Soup works equally well in a slow cooker or on the stove. In the slow cooker, combine the ingredients and let them simmer while you go about your day. Add the barley 1–2 hours before serving so it cooks to tender perfection, or cook the barley separately up to a day ahead.
The long, gentle heat helps the flavors meld, and leftovers often taste even better the next day. Serve with your favorite crusty bread, focaccia, or rolls for dipping.

Storage
This soup refrigerates and freezes well. Store leftovers in the fridge for up to three days and reheat on the stove or in the microwave. For freezer storage, divide into individual portions for convenient thawing and reheating.
Make extra to keep on hand for quick lunches and busy evenings—this recipe freezes and reheats beautifully without losing flavor.
