Ingredients
For the Tzatziki:
- 1 cup plain Greek yogurt (full-fat preferred)
- 1/2 cup English cucumber, grated and squeezed dry
- 1 clove garlic, peeled and minced
- 1/2 teaspoon fresh lemon juice
- Pinch of salt and pepper
For the Gyro Pita:
- 1 pound ground lamb
- 3 large cloves garlic, minced
- 2 teaspoons granulated onion
- 2 teaspoons dried oregano
- 1 teaspoon dried marjoram (or extra oregano)
- 1 teaspoon kosher salt
- 3/4 teaspoon black pepper
- 1/2 teaspoon dried rosemary, finely crushed
- 1/2 teaspoon dried thyme
- 1/2 teaspoon ground cumin
- 1/4 teaspoon baking soda
- Pinch of cayenne pepper (optional)
- 6 pocketless pita breads
For Serving:
- 1 red onion, thinly sliced
- 1 tomato, thinly sliced
- 1/2 cup crumbled feta cheese
- Optional: torn lettuce, fresh parsley, mint, or dill
Instructions
- Place a sheet pan with a cooling rack in an oven set to “keep warm.”
To Make the Tzatziki
- In a medium bowl, combine Greek yogurt, grated cucumber (well drained), minced garlic, lemon juice, salt, and pepper. Stir, taste, adjust seasoning, then cover and refrigerate while you prepare the lamb.
To Make the Gyro Pitas
- Line a half sheet pan with parchment and scatter the ground lamb across it. Sprinkle with minced garlic, granulated onion, oregano, marjoram, salt, pepper, rosemary, thyme, cumin, baking soda, and cayenne if using. Gently toss to combine—don’t overwork the meat.
- Divide the mixture into six equal balls.
- Preheat a griddle, cast-iron skillet, or stainless steel pan over medium-high heat. When drops of water sizzle and dance, it’s ready.
- Working one ball at a time, place a meat ball in the pan, set a pita over it, and press down firmly with a heavy spatula until the meat is 1/4–1/2 inch thick. Cook about 3 minutes until a deep caramelized crust forms and the meat releases easily. Flip the crusted pita and cook the pita side about 3 minutes, reducing heat if the bread browns too quickly. For more well-done meat, add 1–2 minutes to the first side and cover while cooking the second side. Transfer finished pitas to the warm oven and repeat with the remaining portions.
To Assemble and Serve
- Top each gyro pita with sliced red onion, tomato, crumbled feta, generous tzatziki, and torn lettuce, parsley, mint, or dill as desired. Serve immediately.
Storage and Reheating
- Store un-garnished gyro pitas separated by parchment in a zipper bag in the refrigerator or freezer. Reheat on parchment in a 350°F oven or air fryer about 5 minutes, or until warmed through.
