Silky smooth cheese sauce coats bite-sized pasta in this ultra-creamy, flavorful high-protein mac and cheese that delivers an impressive 55 grams of protein per serving. It absolutely does not taste like health food. Grab your blender or food processor and get ready to make a simple, decadent cheese sauce that might become your new go-to mac and cheese.

High Protein Mac and Cheese
Everyone in our house went nuts for this mac and cheese. I’m team stovetop; my husband prefers baked. The boys switch between the two. No matter our usual preferences, we all agreed this version was exceptionally good — and that was before we even realized how much protein it contained.
I received a few skeptical looks when I mentioned I was experimenting with a high-protein recipe. There may have been a few muttered “why?”s. But once it was on the table, they ate every bite and gave it enthusiastic thumbs-up reviews.
My husband even declared it “way better than regular mac and cheese.” The ingredients I used to boost protein also made the creamiest, most indulgent cheese sauce I’ve made. If you taste this, you won’t think “health food” — you’ll think comfort food done right.
Protein Mac and Cheese
High-protein mac and cheese may not sound tempting, but this one is outrageously good. It uses a reliable blend of seasonings and spices, and the result is an unforgettable comfort dish that’s incredibly creamy. If you’re wondering why anyone would make a protein-forward mac and cheese, here’s the practical side: many people, especially older adults and fitness-minded eaters, intentionally increase protein intake for health and recovery.
For me, a doctor recommended increasing protein “as a woman of a certain age.” That nudged me to experiment with ways to boost daily protein while keeping flavor and texture intact. The good news is there are simple, common ingredients that pack a lot of protein without compromising taste.
High Protein Mac and Cheese Recipe
This recipe stacks three high-protein ingredients to reach its impressive protein total.
First, unflavored whey protein powder raises both protein and calcium. Whey is the liquid remaining after milk has been curdled and strained during cheese or yogurt production. It’s especially useful here because whey proteins are hydrophilic — they attract and hold water — which helps create an ultra-silky sauce.

How the Ingredients Work
Whey powder does most of the protein-boosting work and plays a large role in the sauce’s creamy texture. Use only unflavored whey — flavored powders will ruin the dish. If you don’t have whey on hand, you can omit it, but expect a slightly less sumptuous sauce.
Cooking with higher-protein milk also helps. I like using high-protein whole milk for richness; it increases protein and reduces sugar compared to standard whole milk. The final protein contributor is full-fat cottage cheese, which blends into the sauce and adds body, tang, and more protein. Whole-milk cottage cheese and whole milk yield the creamiest result; lower-fat options will produce a thinner, less flavorful sauce.
The method is straightforward: cook and drain the pasta, blend the cottage cheese, shredded cheddar, milk, whey powder, cornstarch, and seasonings until smooth, then heat the mixture in the empty pasta pan over medium-low until bubbly and slightly thickened. Stir in the cooked pasta and serve. Blending first prevents the whey from clumping and ensures a perfectly smooth texture.
