Overnight Breakfast Taco Enchiladas Recipe for Busy Mornings
Overnight Taco Breakfast Enchiladas combine the best of breakfast egg bakes, taco flavors, and enchiladas into one convenient, delicious dish that you assemble the night before and bake in the morning—perfect for busy households.
I’m not naturally a breakfast person—I can get by on tea until noon—but my family absolutely needs breakfast soon after waking. Because I’m not at my best early in the morning, I rely on make-ahead recipes that let everyone eat well without waking me up for prep. These Overnight Taco Breakfast Enchiladas are one of my favorites for taste, convenience, and simplicity.

This casserole-style dish brings together taco meat, tortillas, eggs, and cheese in a single pan. The beauty is in the make-ahead step: assemble everything the night before, cover with foil, and refrigerate. In the morning you simply pop the covered pan into the oven, set the timer, and finish with a quick sprinkle of cheese when it’s nearly done.
When the oven timer dings, remove the foil, add the remaining cheese, and return it to the oven until the cheese is melted and the eggs are set. Serve with whatever taco toppings you like—avocado, salsa, lettuce, sour cream, cilantro, and green onions all work wonderfully. If it’s a taco topping, it’s fair game on these enchiladas.
I often make these after a taco night, using leftover taco meat and toppings so nothing goes to waste and breakfast is effortless. The aroma fresh from the oven is irresistible, even to a committed non-breakfast eater like me.

Choose white flour, wheat flour, or corn tortillas. White flour tortillas absorb the egg mixture well and hold a nice puff. Wheat flour tortillas puff up high but settle as they cool. Corn tortillas stay denser and are the most traditional option—note they’re usually smaller, so you may need more to fill your pan. For a 9 x 13-inch baking dish, 8-inch flour tortillas fit best.
Leftover taco meat works perfectly here; seasoned beef, turkey, or shredded chicken are all excellent. You can double the recipe for larger families—leftovers keep in the fridge for about four days or freeze for longer storage.
For easy serving, have toppings ready: shredded lettuce, grated cheese, sliced green onions, salsa, sour cream, avocado, cilantro, and hot sauce are great choices. Using leftover taco toppings makes the morning even simpler.

Overnight Taco Breakfast Enchiladas
Rebecca Lindamood
Ingredients
- Non-stick cooking spray or olive oil for brushing the pan
- 2 cups leftover taco meat, slightly reheated
- 1 1/2 cups shredded Monterey Jack or Pepper Jack cheese
- 1 1/2 cups shredded Cheddar cheese
- 10 flour tortillas (8-inch)
- 1 1/4 cups half and half
- 4 large eggs
- 1 tablespoon all-purpose flour
- 2 teaspoons chili powder
- 3/4 teaspoon kosher salt
- 3/4 teaspoon black pepper
Optional Toppings
- Sour cream
- Lettuce
- Salsa
- Avocados
- Hot sauce
- Cilantro
- Green onions
- Black olives
Instructions
-
Preheat is not required the night before. Generously coat the bottom and sides of a 9 x 13-inch baking dish with non-stick cooking spray or brush with olive oil.
Toss both cheeses together in a bowl and reserve 1 cup in the refrigerator for the morning. Mix the taco meat with the remaining grated cheese. Place about 1/3 cup of the taco meat and cheese mixture down the center of each tortilla, roll up, and arrange seam-side down in the prepared pan.
In a separate bowl, whisk together the half and half, eggs, flour, chili powder, salt, and pepper until smooth. Pour the egg mixture evenly over the rolled enchiladas, cover the pan tightly with foil, and refrigerate overnight or for at least 8 hours.
In the morning, place the foil-covered pan in a cold oven and set the temperature to 350°F. When the oven reaches temperature, set a timer for 30 minutes. After 30 minutes remove the foil, sprinkle with the reserved cheese, and bake an additional 10 minutes or until the eggs are set, tortillas are golden, and cheese is melted. For easier serving, cut the pan into 20 smaller portions.
Serve with any combination of sour cream, lettuce, salsa, avocados, hot sauce, cilantro, black olives, or green onions.
