Jerk Chicken Tacos with Pineapple Salsa & Lime Crema
Get adventurous with an easy weeknight meal: tantalizing jerk chicken tacos. Bright, citrus-forward and juicy, these tacos balance tangy, spicy chicken with sweet grilled pineapple, paper-thin onion slices and fresh herbs. They’re not your average taco—and they’re incredibly satisfying.

These tacos are forgiving and flexible. Marinate the chicken up to 24 hours ahead for maximum flavor, or cook it one or two days in advance and reheat before serving. The chicken also adapts to whichever cooking method you prefer—grill, oven, stovetop, or air fryer—so you can prepare them however is most convenient.
Heat level depends on your marinade choice. A milder bottled or homemade jerk marinade yields a gentle kick; a hotter version brings real fire. Choose your spice level based on who you’re feeding and how bold you want the tacos to be.

Jerk Chicken Taco
This recipe highlights easy ingredients and simple equipment so you can enjoy bold flavors without fuss. Key ingredients include:
- Boneless skinless chicken thighs (recommended) or chicken breasts
- Jerk marinade (store-bought or homemade)
- Pineapple rings in juice (drained)
- Brown sugar
- Small flour or corn tortillas
- Whole lettuce leaves
- Red onion
- Bell pepper
- Cilantro leaves
- Fresh lime wedges
- Sauce or mango salsa (optional)
Boneless skinless chicken thighs are my go-to: they stay juicy and are forgiving when cooking. If you prefer breasts, reduce cooking time to avoid drying them out.

Making a true Jamaican jerk marinade from scratch requires a variety of ingredients—scotch bonnet peppers, allspice, scallions and herbs—but a quality jarred marinade works perfectly as a time-saving shortcut. Pick mild, medium, or hot depending on how spicy you want the final tacos.
Grilled pineapple is essential here. Sprinkle the rings with brown sugar and quickly pan-sear or grill them to caramelize the sugar—this sweet, fragrant fruit pairs beautifully with spicy, citrusy jerk chicken.
Tortilla choice is up to you: small flour tortillas are soft and pliable, while corn tortillas make the dish gluten-free. I like to char tortillas briefly over an open flame for a touch of smokiness, but a hot skillet or a damp towel in the microwave will also warm them nicely.

How to Warm Tortillas
Charring tortillas adds flavor and softens them. If you don’t have a gas flame, heat them briefly in a cast-iron skillet or wrap a stack in a damp towel and microwave until warm. For sauce, try a jerk crema (mayonnaise or sour cream thinned with lime and a pinch of jerk seasoning), a favorite store-bought sauce, or a spoonful of fresh mango salsa.
To assemble: place a leaf of lettuce on a warm tortilla, pile on sliced jerk chicken, add a grilled pineapple ring, thinly sliced onion, diced bell pepper, a sprinkle of cilantro, a squeeze of lime, and a drizzle of sauce or a spoonful of mango salsa.

Air Fryer, Grilled, Oven or Stove-Top Jerk Chicken
Equipment you’ll need:
- Air fryer, grill, or oven
- Skillet or baking dish
- Tongs
- Zipper top bag, bowl, or airtight container (for marinating)
- Chef knife and cutting board
- Foil, paper towels, or a tea towel
Use a grill pan or skillet to cook the pineapple and tongs to handle chicken, pineapple and tortillas. This recipe is intentionally simple—choose your preferred cooking method and enjoy the results.

Jerk Chicken Tacos
Toss the chicken and jerk marinade together in a zipper top bag, airtight container, or covered bowl and refrigerate for at least 2 hours and up to 24 hours for best flavor.
To Make Air Fryer Jerk Chicken:
Preheat the air fryer to 400ºF. Arrange chicken in a single layer and cook 12–14 minutes, flipping halfway, until the thickest part reaches 165ºF.
To Make Stove Top Jerk Chicken:
Heat a nonstick skillet or grill pan over medium-high and brush with oil. Cook chicken in a single layer 12–14 minutes, flipping once, until it reaches 165ºF in the thickest part.
To Make Grilled Jerk Chicken:
Preheat the grill to medium (350–400ºF). Oil the grates and grill chicken 4–6 minutes per side, flipping once, until an instant-read thermometer registers 165ºF in the thickest part.
To Make Oven Jerk Chicken:
Preheat the oven to 425ºF. Brush a baking pan with oil and arrange chicken in a single layer. Roast about 20 minutes, flip halfway through, and cook until the thickest part reads 165ºF.

To Assemble the Jerk Chicken Tacos:
Drain and pat dry the pineapple rings. Sprinkle half the brown sugar over one side of the rings. Heat a nonstick skillet or grill pan over medium-high, brush with neutral oil, and cook the pineapple sugar-side down until fragrant and lightly browned, about 3–4 minutes. Sprinkle the remaining sugar on top, flip gently, and cook another 3–5 minutes until sticky and caramelized.
Warm or char tortillas over an open flame, or stack and microwave them wrapped in a damp paper towel for about 45 seconds. Slice the cooked jerk chicken and keep it with any resting juices.
Assemble each taco: lay a lettuce leaf on a warm tortilla, add a generous portion of sliced jerk chicken, top with grilled pineapple, thinly sliced red onion, diced bell pepper, cilantro, and a squeeze of lime. Finish with a drizzle of jerk crema, mayo thinned with lime, a favorite sauce, or a spoonful of mango salsa.
