Authentic Spanish Tortilla (Classic Spanish Omelette Recipe)
I developed this post and recipe in partnership with Kitchen Fair and their Made‑in‑America, non‑toxic cookware. Their high-quality pans are thoughtfully designed and ideal for everyday use.
To celebrate my little brother Luke’s move into a new place, I showed him Kitchen Fair’s selection and asked him to pick a pan. He chose the Expression 10‑inch Stainless Steel Fry Pan for its everyday versatility. It features a patented, PFOA‑free Eterna® Black Galaxy nonstick coating, which made me eager to test it. My favorite test for a nonstick pan is a classic Spanish tortilla (Spanish omelette): if a pan can cook eggs beautifully and release cleanly, it’s a pan worth owning.

The Spanish tortilla is simply potatoes and onions gently cooked until tender, mixed with beaten eggs and seasoning, then finished in a skillet until set. The technique differs slightly from a frittata or omelette: you lift cooked edges with a flexible spatula and tilt the pan so the uncooked egg flows underneath, repeating until the surface is mostly set. A heavy, evenly heating pan is essential so the tortilla cooks uniformly and holds together when you slide it onto a plate to flip. The Kitchen Fair Expression pan passed both the heat-retention and nonstick release tests with flying colors.

This Spanish tortilla is a wonderful example of humble ingredients elevated by simple technique. Tender potatoes and onions are bound by light, set egg—the potato is the star, while the egg provides structure. Tortilla can be served hot, warm, or cold, plain or garnished. For this serving I topped it with arugula, pea shoots, and very thin slices of prosciutto for a straightforward, satisfying meal.

Cook’s Notes
- Use a sturdy, truly nonstick skillet with a thick, even bottom. This helps cook the tortilla evenly and makes flipping easy.
- You may leave potato skins on or remove them. Slice the potatoes as thinly as possible; a mandoline or V‑slicer works best. If using a mandoline, take safety precautions like a cut‑proof glove. A food processor’s thin slicing blade is an alternative.
- Slice the onions and potatoes to the same thickness so they cook evenly.
- When first adding potatoes and onions to the pan, the surface will be crowded—that’s fine. Add a pinch of salt and toss. Covering the pan with a lid or a larger pan traps heat and moisture to speed softening.
- Let the potatoes cool only 4–5 minutes before adding to the eggs. It’s okay if the egg begins to set around the potatoes; you want to return the mixture to the pan quickly so it cooks into a compact shape.
- A flexible spatula is essential for gently lifting set edges and allowing liquid egg to flow underneath. A flexible but sturdy, heat‑proof spatula is ideal.
- Flipping the tortilla can feel intimidating at first, but a reliable nonstick surface makes it simple. Run your spatula around the inside to release the edge, invert the tortilla onto a large plate, then quickly flip the pan over the plate and invert again so the uncooked side finishes in the pan. Return to heat to set the second side.
- Let the tortilla rest at least 20 minutes before slicing. This helps the structure set and prevents the potato layers from sliding apart.
- Serve plain or garnished with greens and thinly sliced cured meat. Spanish tortilla works as an appetizer, light meal, or part of a larger spread.

Pin Recipe
Ingredients
For the Spanish Tortilla:
- 1/4 cup plus 1 tablespoon extra virgin olive oil, divided
- 4 medium Yukon Gold potatoes, scrubbed and very thinly sliced
- 1 small yellow cooking onion, peeled, halved, and very thinly sliced
- 2 teaspoons kosher salt, divided
- 2 cloves garlic, peeled and minced or pressed
- 8 large eggs, room temperature
- 1/4 cup chopped parsley
- 1 teaspoon coarsely ground black pepper
Optional Garnish:
- 1/4 cup finely diced red bell pepper
- 2 cups arugula or mixed spring greens and shoots
- 8 paper‑thin slices prosciutto or Iberico ham
Instructions
- Swirl 2 tablespoons olive oil in a 10‑inch heavy‑bottomed nonstick skillet over medium‑high heat. Add the potatoes, onions, and 1 teaspoon salt. Toss to coat and cook, turning frequently with a flexible spatula, for 5–6 minutes. Add the garlic and stir until fragrant. Cover, reduce heat to medium‑low, and cook 15–20 minutes, opening and stirring occasionally, until potatoes are tender. Remove the lid and let cool 4–5 minutes.
- Meanwhile whisk the remaining salt, eggs, parsley, and pepper in a large bowl until even. Gently fold in the potatoes and onions. Add the remaining tablespoon of olive oil to the pan and return to medium heat. Pour the egg and potato mixture into the pan and cook undisturbed until the eggs on the bottom begin to set, about 2 minutes.
- Use a flexible spatula to lift set edges and tilt the pan so uncooked egg flows underneath. Repeat around the pan until the sides are set. Slide the tortilla onto a heatproof plate, then invert the pan over the plate and flip so the uncooked side finishes in the pan. Cook 1–2 minutes over medium‑low heat to set the second side.
- Let the tortilla cool at least 20 minutes before turning out and slicing. Serve plain or topped with diced bell pepper, arugula or mixed greens, and thinly sliced prosciutto.
